We hope "Nourish to Flourish" contributes to a fundamental shift in how schools view the role of mealtimes — from a logistical service to a purposeful educational experience. The change we most want to see is this: students choosing healthy food not because they are told to, but because they understand why it matters, genuinely enjoy it, and feel empowered to decide for themselves. When healthy eating habits are formed early, in a joyful and positive environment, they become a foundation for lifelong health and wellbeing. We also hope that nutrition education becomes a structured part of school curricula — not just theory in textbooks, but lived experience: growing food, cooking, measuring, and reflecting. Every school meal is a learning opportunity — about science, sustainability, self-agency, and personal responsibility. More broadly, we hope schools will recognise that reducing food waste and building healthy eating habits are not separate goals — they are two sides of the same journey toward a generation of students who are more conscious of both their health and their environment.

Why did you create this innovation?

Background
Sky-Line's five campuses in Da Nang serve lunch to over 2,200 students daily. Despite balanced menus, one problem persisted: students refused vegetables, wasted food, and saw healthy eating as an obligation. By 2024, food waste was estimated at ~19% — nearly one-fifth of all food prepared — with vegetables making up the largest share.
The real problem: mindset, not menu
Adjusting recipes didn't work. The root cause was deeper: students had never grown or prepared food themselves, didn't understand why vegetables mattered, and had no ownership over what they ate. Nutrition knowledge in the curriculum remained theoretical, disconnected from daily life.
The gap
There is a critical difference between a nutritionally adequate meal and a truly healthy meal. The latter requires students to understand, enjoy, and choose what they eat — not simply comply. Lasting habits come from agency, not obligation. And since family strongly shapes children's eating behaviours, solutions needed to extend beyond the school gate.
Our philosophy: Learn to Live Happily
"Nourish to Flourish" is grounded in Sky-Line's core philosophy — "Learn to Live Happily" — built on four pillars: Understanding, Contentment, Capability, and Sharing. Healthy eating embodies all four. Since January 2025, the program has been implemented across all five campuses — transforming mealtimes into a living educational experience where students are empowered to own their health, not just eat their greens.

What does your innovation look like in practice?

Since January 2025, "Nourish to Flourish" has been implemented across Sky-Line's five campuses through six integrated components.
In the classroom, nutrition lessons are embedded into regular teaching, with each session ending in a practical commitment students apply that week.
In the garden, students plant, harvest, and cook their own vegetables — building a genuine connection with fresh food and reducing long-standing resistance to greens. Students also co-design menus and choose their own dressings, turning meals into creative, personal choices.
Through events, the "Junior Chef" competition and "Fresh Drink Workshop" reframe healthy eating as celebration, not obligation.
Through peer leadership, 40 trained Nutrition Squad members promote healthy habits among classmates. The "Healthy Meal Passport" gamifies mealtimes for kindergarten and primary students — earning stars for finishing meals, eating vegetables, or trying new dishes.
Through daily measurement, food waste is weighed after every meal and tracked as a percentage of total food prepared. The "Green Index" — a four-level tool — monitors uneaten vegetables in waste bins daily, giving leadership real-time data to adjust menus and interventions.
Through training, all 255 staff received nutrition workshops and adopted the "Rainbow Meal" as the school's healthy eating standard. Around 180 parents joined workshops to reinforce healthy habits at home.
Seven coordinated teams ensure every component runs smoothly.

How has it been spreading?

"Nourish to Flourish" piloted at Sky-Line Riverside in January 2025. After six months of positive data — declining food waste and improved student eating behaviours — the model scaled to all five campuses: Riverside, Global, Central, Hill, and Beach by mid-2025, reaching 2,200 students, 255 staff, and ~180 parents. Each campus received dedicated training, established its own garden, and implemented the Green Index consistently for cross-campus comparison and continuous improvement.
The project is regularly documented on Sky-Line's social media, attracting interest from educators beyond the system. On 21 April 2026, it was showcased at the Green Transition Conference organised by the Da Nang Department of Environment — recognised as a model linking nutrition education with food waste reduction and sustainable development. Several schools in Da Nang have since contacted Sky-Line to explore the Green Index, Healthy Meal Passport, and six-component framework.
Sky-Line is a member of TASS — The Alliance for Sustainable Schools (tass-asia.org), an international network supporting sustainable schools across Asia — providing resources and a platform to share this model regionally and globally.
Looking ahead, Sky-Line aims to share the programme with schools across Central Vietnam through workshops and implementation guides, with a longer-term vision of connecting with international education networks through TASS.

How have you modified or added to your innovation?

Throughout implementation, "Nourish to Flourish" has been continuously refined based on real data and feedback from students, teachers, and parents.
Measurement: Initially, the school only tracked total food waste. After observing that vegetables consistently dominated waste output, the Green Index was developed as a dedicated tool: at Levels 3–4, corresponding to "many greens" or "overflowing greens" in waste bins, Levels 1–2 "no greens visible" or "scattered greens" — measuring uneaten greens across four levels to more precisely capture changes in student eating behaviour.
Menus: Based on Green Index data and student suggestions, menus are adjusted flexibly each week — incorporating vegetable dishes prepared in ways students enjoy, and integrating the "Rainbow Meal" model as the visual standard for a healthy meal.
Student activities: The Healthy Meal Passport was initially designed for primary students, then extended to kindergarten level after observing its strong motivational impact on younger children.
Scaling: The original model was designed for one campus. When expanding to five campuses, the school developed a standardised toolkit and unified training process to ensure consistent quality, while allowing each campus to adapt to its own student profile and available space.

If I want to try it, what should I do?

SStep 1 — Assess your current situation
Start by observing and measuring your school's mealtime reality: how much food is wasted daily? Do students eat vegetables? What are their attitudes toward meals? This baseline data will be essential for tracking progress.
Step 2 — Build your implementation team
Form a core team including a student Nutrition Squad, homeroom teachers, kitchen staff, extracurricular coordinators, a project secretary, and campus director. Assign clear responsibilities to each group before launching.
Step 3 — Pilot at one campus
Choose one campus to pilot first. Introduce components gradually — starting with in-class nutrition lessons and a small school garden. Apply the Green Index and weigh food waste from day one to establish measurable tracking.
Step 4 — Measure, adjust, and scale
Review data weekly, gather feedback from students and teachers, and adjust menus and activities based on real results. Once the model proves effective at the pilot campus, scale system-wide using a standardised toolkit and training process.

Implementation steps

Introduce nutrition education
Nutrition education is integrated into classroom lessons and daily activities to help students understand balanced meals and the role of different food groups, especially vegetables. Interactive methods such as discussions, visual materials, and hands-on activities are used to engage students and build positive attitudes toward healthy eating. This step provides the foundation for behavioral change by ensuring students understand before they act.
Improve school meal design
The school develops and continuously refines its menu based on balance, diversity, and age appropriateness, ensuring all four food groups are included. The “Rainbow Meal” model is applied to enhance both nutritional value and visual appeal, making meals more engaging for students, especially vegetable dishes. Menus are regularly reviewed and adjusted based on student feedback and real-time data.
Implement the “From Garden to Table” model
Students participate in planting, caring for, harvesting, and preparing food at school. Through hands-on experience, they develop a better understanding of food origins and build a positive connection with vegetables. This approach reduces resistance to vegetables and encourages students to try new foods proactively.
Organize experiential activities and competitions
The school organizes activities such as the “Junior Chef” competition and fresh beverage workshops, along with other healthy food-related experiences. These activities make healthy eating enjoyable, creative, and student-driven, transforming it from an obligation into a positive and engaging experience.
Apply behavior incentive mechanisms
The school implements incentive systems such as the “Nutrition Squad” and the “Healthy Meal Passport” to encourage and recognize positive eating behaviors. Students receive stamps or rewards for finishing meals, eating vegetables, or trying new foods. This gamified approach builds intrinsic motivation and supports the development of healthy eating habits.
Measure and monitor data
The school conducts daily food waste measurements and tracks the “Green Index” to assess students’ vegetable consumption. Data is aggregated weekly to identify behavioral trends, providing a basis for adjusting menus, cooking methods, and educational activities accordingly.
Train and engage stakeholders
The school organizes training sessions and workshops with the participation of nutrition experts who are medical doctors, ensuring that teachers, kitchen staff, and parents are equipped with evidence-based nutritional knowledge. This professional input strengthens the quality of menus and activities. Collaboration between the school and families further supports the long-term sustainability of healthy eating habits among students.
